Happy 4/20!! This is one of my fav recipes from Hot Thai Kitchen, even though this is a Chinese dish.
Mapo Tofu
Ingredients
Sichuan peppercorns, toasted.
Ground beef
Soy sauce
Garlic
Ginger
Black pepper
Spicy broad bean paste or douban jiang or toban djan (see note below)
Chinese black beans or douchi
Unsalted chicken stock, pork stock, or water
Chinese cooking wine (optional)
Sugar
Cornstarch
Medium smooth tofu or soft tofu
Green onions
Chili oil (optional for garnish)
Mapo Tofu Step-By-Step Instructions
1. Add the beef and soy sauce in a hot wok without any added oil and cook, breaking it up into small pieces.
2. Once the beef is browned, remove from the pan.
Add a little more cooking oil to the pan and saute the garlic and ginger for a few minutes until soft and aromatic.
3. Add ground black pepper, half of the ground Sichuan peppercorns, the broad bean paste and the black beans. Saute for about 30 seconds
4. Deglaze with stock, scraping off any bits that are stuck to the bottom. Add the sugar, Chinese cooking wine, and the beef.
5. Simmer gently for 5 mins to reduce and to allow flavours to mingle.
6. Dissolve the cornstarch in some water and stir it into the sauce, a little at a time until desired consistency.
7. Gently add the tofu and nudge it around so it is sitting in one layer. Spoon some the sauce over the tofu, then let it simmer gently for another 5 minutes, and you’re done! Serve with rice and garnish with chopped green onions and chili oil, if desired.

Oyster mushrooms, specifically the fungus Pleurotus ostreatus, are carnivorous and prey on nematodes using a nerve gas to paralyze and kill them. The fungus releases a toxin, 3-octanone, from lollipop-shaped structures called toxocysts on its hyphae. This toxin disrupts the nematodes’ cell membranes, leading to a calcium influx that causes paralysis and death.
Here’s a decadent and crispy twist on the classic deviled eggs: Fried Deviled Eggs!
Ingredients:
For the Eggs:
• 6 large eggs
• 1/2 cup all-purpose flour
• 2 large eggs (beaten, for coating)
• 1 cup panko breadcrumbs
• Vegetable oil (for frying)
For the Filling:
• 1/4 cup mayonnaise
• 1 tsp Dijon mustard
• 1 tsp white vinegar
• 1/2 tsp garlic powder
• 1/2 tsp smoked paprika (plus extra for garnish)
• 1/4 tsp cayenne pepper (optional, for spice)
• Salt and black pepper to taste
Optional Toppings:
• Chopped fresh chives
• Crumbled bacon

Instructions:
1. Hard-Boil the Eggs:
• Place the eggs in a pot of cold water. Bring to a boil, then remove from heat and let sit, covered, for 10-12 minutes.
• Transfer the eggs to an ice bath to cool. Peel the eggs and cut them in half lengthwise.
2. Scoop Out Yolks:
• Carefully remove the yolks and place them in a small bowl. Set the whites aside on a plate.
3. Prepare the Filling:
• Mash the yolks with a fork. Mix in mayonnaise, Dijon mustard, vinegar, garlic powder, smoked paprika, cayenne (if using), salt, and pepper. Adjust seasoning to taste. Transfer to a piping bag or zip-top bag for easier filling later.
4. Bread the Egg Whites:
• Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
• Dip each egg white half into the flour, then into the beaten eggs, and finally into the breadcrumbs, pressing gently to adhere.
5. Fry the Egg Whites:
• Heat about 2 inches of oil in a deep skillet or pot to 350°F (175°C).
• Fry the breaded egg whites in batches until golden brown and crispy (about 2-3 minutes). Remove and drain on paper towels.
6. Assemble:
• Pipe or spoon the yolk mixture into the fried egg whites.
• Garnish with smoked paprika, chives, or bacon as desired.
7. Serve:
• Serve immediately for the best crispiness.

Came here to spread some positivity! It is a shared experience that we have all felt isolated, hurt, misunderstood, or in pain, but all of these feelings are temporary. Try to find the silver lining. Happy Easter and 4/20. Did you know that Cheetahs have trouble breeding in captivity due to having a lot of anxiety, inbreeding and poor sperm motility. Also while they are big cats they cannot roar and instead meow. They are also usually docile towards humans.

I volunteer at a cat rescue with some feral cats and only kinda feral. Best tip for if you need to get them into a carrier use one of the stick/string/feather toys to lure them in! It’s usually more comfortable for them than picking them up. Odd tip but if you have a sweet baby that doesn’t like going to the vet it can make the experience a little easier. Happy 4-19/20!

That was a haiku about the atmospheric phenomenon known as sun dogs where the sun creates a solar cross because of a certain alignment of ice crystals in the atmosphere… I think. Anyways I saw one on Easter a few years ago so thought I would share. No one else seemed to notice. It was a lesson in focus for me. Don’t dwell on the ugly, look around and you will see something beautiful.

Raccoons, if acquired as babies, make a great pet and help with a house cats boredom. We only kept them for one spring, summer, and into fall. Then we’d let them be wild again. Not sure if they can be kept continuously with good results. It’s that winter hibernation that gets tricky. I just love their miniature fur covered human hands! They are so fricken cute!
